Salt plays a crucial role in maintaining human health. It is the main source of sodium and chloride ions in the human diet. Sodium is essential for nerve and muscle function and is involved in the regulation of fluids in the body.

Salt is used as a seasoning to enhance the taste of food. It makes bland foods such as carbohydrates (bread, pasta, etc) palatable and it helps to bring out the natural flavours in other foods.

Adding salt to foods helps certain molecules in those foods more easily release into the air, thus helping the aroma of the food, which is important in our perception of taste.

Salting is the preservation of food with dry edible salt. Vegetables such as runner beans and cabbage are also often preserved in this manner. Salting is used because most bacteria, fungi and other potentially pathogenic organisms cannot survive in a highly salty environment, due to the hypertonic nature of salt.
